Out of the many Hindi films that revolve around food – head here if you’re wondering which ones – one of our favourites is Luv Shuv Tey Chicken Khurana, a 2012 comedy film produced by Ronnie Screwvala, Siddharth Roy Kapur and Anurag Kashyap.
The Story
In the movie, Omi Khurana returns to his native village in Punjab, on the run from a UK gangster and finds that his grandfather has forgotten the recipe for the Chicken Khurana, which is his family dhabba’s signature recipe. Through the course of the movie, Omi tries to recover the recipe with the help of his love interest, Harman. Eventually, he discovers that the recipe includes a narcotic, but vows never to reveal that secret to anyone.
Trying to recover the recipe goes a long way in bringing the erstwhile estranged Harman and Omi back together. Inspired by the power of a good chicken dish, we’ve put together a recipe for our own version of chicken khurana, adapted from a Punjabi style chicken recipe.
Serve with rice or rotis for lunch or dinner.
- 2tbsp ghee
- 2tbsp vegetable oil
- 8 Chicken legs
- 1tsp Cumin seeds
- 1 onionminced
- 5cloves garlicminced
- 2tbsp ginger rootminced
- 1 tomatochopped
- 1tbsp tomato paste
- 1tbsp garam masala
- 1tbsp turmeric
- 1 Kashmiri chillyroughly chopped
- 1/4cup Cilantro
- Combine the oil and ghee and heat in a heavy bottomed pot.
- Sauté the cumin seeds until they begin to crackle and then add the onion.
- Sauté for five minutes.
- Add the garlic and ginger and sauté for five more minutes.
- Add the tomato, garam masala, turmeric, chilly and a cup of water.
- Stir well and bring the mixture to boil.
- Add the chicken and reduce the heat.
- Stir until the chicken is well coated and cook for forty minutes.
- Take off the stove and garnish with the cilantro.
- Serve and enjoy.
